For long and text heavy documents, it is easiest to design in Adobe InDesign with "Spot Color" swatches. That way your customers can send a single (multi-color) PDF for the document, without worrying about layers or export, and you the print shop can export the individual separations using Adobe Acrobat & Distiller. The generated files from this process are normal PDFs which can be used with any Riso or other machine.
